By dispensing with highly processed convenience products
and fresh local production, our products
can score points with a significantly better eco-balance: local purchasing means
short transport routes. This means that expensive transport packaging
and long storage times in cold stores can be avoided
. In the fruit and vegetable sector in particular, this results almost exclusively in
organic waste, and fruit and vegetables can often be stored at
us in the restaurant without additional refrigeration. The
leads to comparatively small cooling areas and direct
energy savings.
Our coffee specialities are brewed from Mövenpick organic/fairtrade
coffee beans, produced in an environmentally friendly way in accordance with international social standards and traded fairly. We are DEÖKO-certified for the coffee and tea products in all our restaurants.
Focus on vegetarian and vegan dishes: We focus on
delicious plant-based cuisine and thus support the better eco-
balance of vegetables. Meat can also be served as a side dish.
When it comes to packaging, we use natural materials wherever possible and avoid unnecessary food packaging.
Cleaning: With the Oasis dispensing system from Ecolab,
correct dosing takes place directly on site
with the addition of water and avoids packaging waste and thick plastic canisters.
This saves around 70% packaging compared to conventional
products and 90% of the transport volume. One
bag for the mixing system replaces around 1,000 spray bottles. In addition,
the dispensing system never overdoses - the chemical
load of cleaning agents in the waste water is significantly reduced
compared to manual use.
